
Brinjals are kid’s least favorite veggies, but they are loaded with so many nutrients that it is advisable that you must include brinjals in your diet. This recipe features brinjals with our most loved potatoes along with tangy vegetables and topped with cheese. After eating this recipe brinjals are going to be your kid’s favorite. You can serve this dish with piri piri fried rice, the recipe of which will be soon posted.Â
Ingredients –
- 1 large brinjals cut into roundel shape
- 3 potatoes, skin peeled and cut into roundels
- 1 1/2 cups boiled veggies ( french beans and carrots )
- ½ cup veggies (onions & capsicum)
- 2 tbsp red chili powder
- ½ cup tomato sauce
- Cornflour slurry (1 tsp cornflour mixed in ½ cup of water)
- Oregano
- Salt to taste
- 1 cup white sauce
- ½ cup grated cheese
Method
- Shallow fry or bake the brinjals and potatoes till fully cooked. Add salt and keep aside.
- In a pan heat some oil. Add the boiled veggies, tomato sauce and cornflour slurry. Mix well.
- Add red chili powder, oregano and salt. Mix well and keep aside.
- Take a baking dish and grease it with oil.
- Place the brinjal roundels all over the dish and place potato roundels on the top of the brinjal.
- Pour the prepared veggies mixture and spread it evenly all over the tray.
- Now pour white sauce and spread it all over the tray. Add the grated cheese as the last layer.
- Place the dish in an oven and bake it for 10 minutes at 200C.
